Are the Hanoi and Saigon dialects of Vietnam mutually intelligible?
Every few years I visit relatives in central and southern Vietnam, but I am not able to speak Vietnamese at all! I’ve decided to learn but most of the resources I’ve found are for northern (Hanoi) dialect.
I’ve found some for the southern (Saigon) dialect eg. FSI material, but one product really is relevant to me.

Yes. Only the North-central and Central regional varieties, which have a significant amount of vocabulary differences, are generally less mutually intelligible to Northern and Southern speakers.
